Ingredients

  • carrots
  • parsnip
  • kohlrabi
  • celery
  • broccoli/cauliflower
  • egg
  • salt
  • semolina
  • vegeta
  • butter

Directions

Dumplings: Mix 2 eggs with semolina and salt in a cup. Start with smaller amounts of semolina and adjust until the mixture is roughly the density of heavy cream. Let it sit for at least 15-20 minutes. Start making soup in the meantime…

Soup:

  1. Cut up carrots into small discs or half-discs (depending on size).
  2. Heat up butter in medium sized bowl and add the carrots.
  3. After the carrots soften a bit, add rest of the cut up veggies except brocolli/cauliflower
  4. Add boiling water bit by bit to let tastes meld (heated up on the side - ideally in a kettle)
  5. Add salt, vegeta to taste.
  6. After 10 minutes add brocolli or cauliflower
  7. Add prepared dumplings with a small spoon - throwing pieces into boiling soup. The dumpling dough should stick together.
  8. After the dumplings cook through the soup is ready
