Ingredients

  • 2/3 cup mayonnaise
  • 1 Tbsp lime juice
  • 3 cups shredded cooked chicken (rotisserie chicken is OK)
  • ½ medium celery stalk, diced
  • ½ small red onion, diced
  • ½ red pepper, seeded and diced
  • 2 Tbsp fresh cilantro, chopped
  • ¼ cup pickled jalapeno, chopped fine
  • Salt and Pepper to taste

Directions

  1. Mix mayonnaise and lime juice in small bowl until combined.
  2. In large bowl toss chicken, celery, onion, bell pepper, cilantro and jalapeno.
  3. Add mayonnaise mixture and toss until evenly coated.
  4. Season with salt and pepper to taste.
  5. Store in refrigerator for up to 2 days.
