Jalapeno Chicken Salad

Ingredients
- 2/3 cup mayonnaise
- 1 Tbsp lime juice
- 3 cups shredded cooked chicken (rotisserie chicken is OK)
- ½ medium celery stalk, diced
- ½ small red onion, diced
- ½ red pepper, seeded and diced
- 2 Tbsp fresh cilantro, chopped
- ¼ cup pickled jalapeno, chopped fine
- Salt and Pepper to taste
Directions
- Mix mayonnaise and lime juice in small bowl until combined.
- In large bowl toss chicken, celery, onion, bell pepper, cilantro and jalapeno.
- Add mayonnaise mixture and toss until evenly coated.
- Season with salt and pepper to taste.
- Store in refrigerator for up to 2 days.
